  • Baba ganoush is a traditional eggplant spread. This classic vegetarian recipe is fantastic when served warm as a dip or a side.

  1. Preheat oven to 400 degrees
  2. With a fork, poke holes all over the eggplant
  3. Place the eggplant onto a lightly baking sheet and roast in the over for 35-45 minutes, or until soft
  4. Once soft, remove from the oven and place in a cold bowl of water
  5. Remove from water and peel the skin from the eggplant
  6. Chop the eggplant into cubes
  7. Add the eggplant, tahini, galic and lemon juice to a blender and blend until smooth
  8. Transfer from the blender into a bowl
  9. Top with olive oil and pine nuts
